A formal buffet is a great way to give your guests a choice of food and has a much more informal feel than a served meal. We serve the starter to the guests, ask each table to come to the buffet in turn, they are also offered seconds (which they always take) and we then serve the dessert and coffee to them. This gives the meal some structure and allows guests to mingle but it also means that they aren’t getting up and down for each course. It works particularly well when there are international guests as it’s a great show case for British food.
